Vegan creamy dreamy shiitake risotto. Our go to meal lately because this recipe is ?
- olive oil
- half a red onion or 2 shallots
- 1 cup Arborio rice (I’ve used basmati & it was delish too)
- 2 cups sliced shiitake shrooms
- 2 tbs tamari (regular soy sauce or coconut aminos work well too)
- 1 liter veggie broth
- thyme, S & P
- 3 tbs nutritional yeast (gives it a creamy cheesy flavour)
Sauté onion or shallots w olive oil. Add shiitake mushrooms, thyme, S&P + tamari. Add rice and sauté for 1 min. Add warmed veggie broth (start by half cup and work up as it absorbs to 1 litre and stir continuously until the rice is cooked “el dente” & enjoy
